Agave, what is it?

Agave is a genus of monocotyledonous angiosperm plants belonging to the Asparagaceae family. Agaves are native to southern North Americaand Central America, with a very high concentration in Mexico.

 

 

 

This genus includes succulent and perennial plants with rosette-like habit and short stems. Its leaves are fleshy and can be up to 25 cm wide with lengths up to 2.5 meters.

Uses of the Agave plant:

Agave plants are to this day used in many ways, such as:

 

 

  • Feeding: A syrup is made from the Agave trees, as thick as Honey (and in fact is often called Miel d’Agave or Miel de Maguey), used as a
    low-glycemic index sweetener.

  • Animal Feeding: are used, in some regions of Mexico, as fodder for cattle.
 
  • Beverage: drinks such as the aguamiel, the pulque, the mescal and the tequila.
 
  • Textile Fibers: Textile fibers used for ropes, nets, bags and carpets
 
  • Ornamental Plant: The bearing, the spectacularity of the flowering, and the size that this plant can reach have contributed to its widespread use in public and private gardens
    all over the world.

The properties of Agave:

Agave is a plant rich in properties and benefits, used as a medicinal plant since ancient times in the area ofAncient Mexico and of North America.

 

 

Its active ingredients are most concentrated in theleaves or flower, and it is used as a
purgative 
or as a laxative.

 

The plant contains a very important substance called Inulin, which is a cardohydrate with the abilities to lower cholesterol, supporting the immune system and to keep diabetes under control thanks to its low glycemic index.

 

In addition, the presence of mineral salts and trace elements make the plant a restorative, particularly of iron, calcium and magnesium.

 

The carbohydrates in agave are also capable of increase calcium absorption and are important probiotics capable of improving intestinal flora and consequently digestion.

Agave juice, what is it and how is it obtained?

A particular processing of certain species of the genus Agave (Agave Americana, Agave Tequilana or Blue and Agave Salmiana), which takes place mainly in Mexico, allows the extraction of Agave juice.

 

 

 

In fact, after having cut and pressed the leaves of the plant for the extraction of its sap
(which must be at least 7 years old) it is subjected to the action of heat or enzymes which act on the indigestible polymers of fructose (called agavine) which are hydrolyzed into simple sugars.

 

 

 

Next, this sap is filtered and concentrated, resulting in the famous Agave Syrup.

 

 

 

This Agave syrup is presented with a color clear tending to transparent, with a sweet taste

and a viscous consistency and is used as a soluble natural sweetener due to its lower glycemic index than that of sugar or honey.

Agave syrup vs. sugar: let's compare them

Agave syrup is a carbohydrate-rich substance, and it consists specifically of:

 

  • Carbohydrates (76%), of which Sugars 68% (12% Glucose and 55% Fructose)
 
  • Water (23%)
 
  • Lipids (0.4%)
 
  • Fibers (0.2%)
 
  • Protein (0.1%)
 
In addition, important trace elements such as the following are also present in Agave syrup:

Potassium, Vitamin C, Folate, Antioxidants.

 
 

Agave Syrup is definitely a viable substitute for Honey or Sugar, as it has a superior sweetening power and a lower glycemic index due to the higher concentration of fructose.


In addition, when compared to Honey, it is also suitable for those who choose a vegan diet being solely of plant origin.


If we compare the Glycemic Index (GI) of 30 of Agave Syrup with that of Sugar of 65, we notice how it affects our blood glucose levels much less. In addition, due to its superior sweetening power, 75 g of agave syrup sweeten as 100 gr of sugar.
